Baked Apple Fritters Gluten Free Cookies

These baked apple fritters gluten-free cookies are a delightful treat with chunks of fresh apples and a sweet glaze. Perfect for those who are gluten-sensitive

Ingredients:

  • 2 cups gluten-free all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened applesauce
  • 1/4 cup milk dairy or plant-based
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup diced apples peeled and cored
  • 1/4 cup melted butter or coconut oil
  • 1/2 cup powdered sugar for glaze
  • 1 tablespoon milk for glaze

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

In a large bowl, whisk together the gluten-free flour, granulated sugar, baking powder, cinnamon, and salt

In a separate bowl, mix together the applesauce, milk, egg, and vanilla extract

Add the wet ingredients to the dry ingredients and stir until well combined

Fold in the diced apples and melted butter or coconut oil

Using a cookie scoop or spoon, drop spoonfuls of the batter onto the prepared baking sheet, spacing them apart

Bake in the preheated oven for 12-15 minutes, or until the cookies are lightly golden around the edges

While the cookies are baking, prepare the glaze by whisking together the powdered sugar and milk until smooth

Once the cookies are done, remove them from the oven and let them cool for a few minutes

Drizzle the glaze over the warm cookies

Allow the glaze to set before serving
