Karas Raspberry Lemonade Cupcakes taste great because they have both sweet and sour lemon in them. The lemonade frosting gives these cupcakes a refreshing twist. The cupcakes are moist and full of flavor. People will love them at your next get-together

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk
  • 1/4 cup fresh lemon juice
  • 1 tsp lemon zest
  • 1/2 cup fresh raspberries
  • 1/4 cup raspberry jam
  • 1/2 tsp vanilla extract
  • Pink food coloring optional
  • For the Lemonade Frosting:
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup fresh lemon juice
  • 1 tsp lemon zest
  • 2-3 tbsp whole milk
  • Yellow food coloring optional
  • Raspberry and lemon zest for garnish

Instructions:

Warm your oven up to 350 F 175C and put paper liners in a cupcake tin

Mix the flour, baking powder, and salt together in a medium-sized bowl using a whisk

Put away

Melt the butter and mix it with the sugar in another bowl until the mixture is light and fluffy

One at a time, add the eggs and beat well after each one

Add the vanilla extract and lemon zest and mix well

Slowly add the dry ingredients to the wet mixture, mixing them in with the milk and lemon juice every so often

Dont mix any further than that

A few drops of pink food coloring can be added to the batter if you want it to have a light pink color

The fresh raspberries should be added slowly

Use two thirds of the batter to fill up each cupcake liner

Put it in the oven and bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean

Take the cupcakes out of the oven and let them cool for a few minutes in the pan

Then, move them to a wire rack to cool completely

Use a cupcake corer or a small knife to make a hole in the middle of each cupcake once they are cool

Put a teaspoon of raspberry jam in each hole

For the frosting made of lemonade: In a different bowl, beat the butter until it is smooth

Add the powdered sugar, lemon juice, and lemon zest one tablespoon at a time, mixing well after each addition

To get the right consistency, add 2 to 3 tablespoons of milk if needed

If you want the frosting to look like lemonade, you can add a few drops of yellow food coloring

The lemonade frosting can be piped or spread on the cupcakes

Add a fresh raspberry and a sprinkle of lemon zest to the top of each cupcake
