Couscous Salad with Cucumber

This cucumber and couscous salad is a tasty and refreshing side dish or light meal. For a quick and healthy meal, this is the best choice. Its full of fresh vegetables and has a tart dressing.

Ingredients:

  • 1 cup couscous
  • 1 1/4 cups boiling water
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions:

Put the couscous in a bowl that can handle heat

Put a lid or piece of plastic wrap over the couscous and pour the boiling water over it

Leave it alone for 5 minutes

Use a fork to break up the grains in the couscous, then set it aside to cool

After the couscous has cooled, put it in a large salad bowl with the diced red bell pepper, cucumber, red onion, and fresh parsley

Put the olive oil, lemon juice, salt, and pepper in a small bowl and mix them together with a whisk

Pour the dressing over the salad and mix it all together

On top of the salad, crumble some feta cheese

Serve right away or put in the fridge until youre ready to serve
