Beef Olives

Beef Olives are a classic comfort food dish, featuring tender beef rolls stuffed with flavorful ingredients and cooked in a savory broth and wine sauce.

Ingredients:

  • 6 thin slices of beef
  • 6 slices of bacon
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • Salt and pepper to taste
  • 1 cup beef broth
  • 1/2 cup red wine
  • 2 tablespoons olive oil

Instructions:

Set the oven to 350F 175C and heat it up

Lay out the beef slices and season with salt and pepper

Place a slice of bacon on each beef slice

In a bowl, mix together the onion, garlic, breadcrumbs, Parmesan cheese, parsley, salt, and pepper

Spread the breadcrumb mixture evenly over the bacon slices

Roll up the beef slices and secure with toothpicks

In a pan, heat the olive oil over medium-high heat

Brown the beef rolls on all sides

Transfer the beef rolls to a baking dish

Pour the beef broth and red wine over the beef rolls

Place the dish in the oven and cover it with foil

Bake for 45 minutes

Remove the foil and bake for an additional 15 minutes, or until the beef is cooked through and tender

Serve hot, spooning the juices from the baking dish over the beef rolls
