Flourless Oatmeal Apple Muffins

These flourless oatmeal apple muffins are a healthy and gluten-free treat. Theyre made with wholesome ingredients like rolled oats, ripe bananas, and fresh apples. Perfect for a quick breakfast or snack on the go

Ingredients:

  • 2 cups rolled oats
  • 2 ripe bananas, mashed
  • 2 eggs
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 cup diced apples about 2 small apples
  • 1/4 cup chopped nuts optional

Instructions:

Warm up the oven to 350F 175C and fill a muffin tin with paper liners or grease it well

Pulse the rolled oats in a blender or food processor until they become like flour

Put the oat flour, eggs, applesauce, honey or maple syrup, vanilla extract, cinnamon, salt, baking powder, and baking soda in a large bowl

Mix the ingredients together

Mix everything together well

Add the diced apples and chopped nuts if using slowly

Fill up each muffin tin cup about three quarters of the way to the top with batter

After the oven is hot, bake the muffins for 20 to 25 minutes, or until a toothpick stuck in the middle comes out clean

First, let the muffins cool in the pan for a few minutes

Then, move them to a wire rack to cool completely
