Vegan Sea Salted Olive Oil Chocolate Chip Cookies

These vegan chocolate chip cookies are made with olive oil for a unique flavor twist. The addition of sea salt enhances the richness of the chocolate and balances the sweetness of the cookie.

Ingredients:

  • 1/2 cup olive oil
  • 1/2 cup coconut sugar
  • 1/4 cup almond milk
  • 2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt, plus extra for sprinkling
  • 1/2 cup vegan chocolate chips

Instructions:

Preheat oven to 350F 175C and line a baking sheet with parchment paper

In a mixing bowl, whisk together olive oil, coconut sugar, almond milk, and vanilla extract until well combined

Add the flour, baking soda, and salt to the wet ingredients, and mix until a dough forms

Fold in the chocolate chips until evenly distributed throughout the dough

Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them a few inches apart

Gently flatten each cookie with the back of a spoon and sprinkle a pinch of sea salt over the top of each cookie

Bake for 10-12 minutes, or until the edges are golden brown

Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely
