Almond Apricot Madeleines

These almond apricot madeleines have the perfect balance of almond flavor and sweet apricot glaze. The almond slices give the soft madeleine texture a lovely crunch, making them a crowd-pleaser for any occasion.

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon almond extract
  • 1/2 cup sliced almonds
  • 1/2 cup apricot preserves
  • 1 tablespoon water

Instructions:

Preheat your oven to 350F 175C

Grease and flour a madeleine pan

In a mixing bowl, whisk together the flour, sugar, baking powder, and salt

Add the melted butter, eggs, and almond extract to the dry ingredients

Mix until well combined

Spoon the batter into the prepared madeleine pan, filling each mold about 2/3 full

Sprinkle the sliced almonds over the batter in each mold

Bake the madeleines for 10-12 minutes or until the edges are golden brown

While the madeleines are baking, heat the apricot preserves and water in a small saucepan over low heat

Stir until the preserves become a smooth glaze

Once the madeleines are done baking, remove them from the oven and let them cool for a few minutes in the pan

Carefully remove the madeleines from the pan and place them on a wire rack to cool completely

Using a pastry brush, glaze the tops of the madeleines with the apricot glaze

Allow the glaze to set for a few minutes before serving
