Asian Grilled Vegan Portobello Mushroom Burger
Ingredients:
- 4 large portobello mushrooms
- 1/4 cup soy sauce
- 2 tablespoons sesame oil
- 2 tablespoons rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 tablespoon maple syrup
- 4 burger buns
- 1 cup shredded cabbage
- 1 cucumber, thinly sliced
- 1 avocado, sliced
- Sriracha mayo for topping optional
- Fresh cilantro leaves for garnish optional
Instructions:
In a bowl, whisk together soy sauce, sesame oil, rice vinegar, minced garlic, grated ginger, and maple syrup to make the marinade
Remove the stems from the portobello mushrooms and place them in a shallow dish
Pour the marinade over the mushrooms, making sure they are evenly coated
Let them marinate for at least 30 minutes
Preheat grill or grill pan over medium-high heat
Grill the marinated mushrooms for about 4-5 minutes on each side, or until tender and nicely charred
While mushrooms are grilling, toast the burger buns on the grill until lightly golden
Assemble the burgers by placing a grilled portobello mushroom on the bottom half of each bun
Top with shredded cabbage, cucumber slices, avocado slices, and any optional toppings like Sriracha mayo and cilantro leaves
Cover with the top half of the bun
Serve immediately and enjoy
