BBQ Chicken Salad with Avocado Cilantro Dressing
A delightful BBQ chicken salad with a burst of flavors, featuring grilled chicken, fresh vegetables, and a creamy avocado cilantro dressing.
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 cup barbecue sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- 8 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels fresh or frozen
- 1/2 red onion, thinly sliced
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup ranch dressing
- 1/4 cup Greek yogurt
- Juice of 1 lime
Instructions:
Warm up the grill over medium-high heat
Add salt and pepper to the chicken breasts
Grill the chicken for 6 to 8 minutes on each side, or until its fully cooked
Take the chicken off the grill and let it rest for five minutes
Then cut it into pieces
Put salad greens, corn, red onion, avocado, cilantro, and cherry tomatoes in a large bowl
To make the dressing, mix ranch dressing, Greek yogurt, and lime juice in a small bowl with a whisk
Spread grilled chicken slices on top of the salad
Drizzle with avocado cilantro dressing
Gently toss everything together
Serve right away and enjoy
