Epic Vegetarian Tacos
These tacos for vegetarians are full of flavor and make a quick and tasty meal. Theyre great for dinner during the week or a party on the weekend.
Ingredients:
- 1 cup cooked black beans
- 1 cup cooked corn kernels
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/2 cup chopped cilantro
- 1 avocado, diced
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1/4 cup salsa
- 1 tsp cumin powder
- 1 tsp chili powder
- Salt and pepper to taste
- 10 small taco shells
Instructions:
Cook the black beans and put them in a large bowl
Add the corn kernels, diced tomatoes, red onion, and cilantro
Put the chopped avocado and cheese shreds in the bowl and mix them together gently by tossing them around
To make a creamy sauce, mix sour cream and salsa in a different small bowl
Use cumin powder, chili powder, salt, and pepper to season the bean and vegetable mix
Combine well
Follow the directions on the package to warm up the taco shells
Spoon some of the bean and vegetable mix into each taco shell to put them together
Put some of the creamy sauce on top of the filling in each taco
Serve right away, and if you want, top with extra cilantro
