Gluten-Free Pumpkin Chocolate Chip Cookies
Ingredients:
- 1 cup canned pumpkin puree
- 1/2 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/2 cup sugar-free chocolate chips
Instructions:
Preheat the oven to 350F 175C
Line a baking sheet with parchment paper
In a large mixing bowl, combine the pumpkin puree, almond flour, coconut flour, melted coconut oil, maple syrup or honey, vanilla extract, spices, and salt
Mix until well combined
Fold in the sugar-free chocolate chips until evenly distributed throughout the dough
Using a spoon or cookie scoop, drop spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie
Flatten the cookies slightly with the back of a spoon or your fingers
Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown and the cookies are set
Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely
