Paleo Breakfast Salad

Start your day with a nutritious and satisfying Paleo breakfast salad. Packed with fresh veggies, protein-rich eggs, and healthy fats from avocado and olive oil, this salad will keep you energized and full until your next meal. Its a perfect choice for those following a Paleo diet.

Ingredients:

  • 2 cups baby spinach leaves
  • 2 hard-boiled eggs, sliced
  • 1/2 avocado, diced
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup sliced cucumber
  • 2 slices cooked bacon, crumbled
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions:

Place the baby spinach leaves in the bottom of a large salad bowl

Top the spinach with the hard-boiled egg slices, diced avocado, cherry tomatoes, sliced cucumber, and crumbled bacon

To make the dressing, combine the olive oil and balsamic vinegar in a small bowl

Pour the dressing over the greens

To taste, add salt and pepper for seasoning

Toss gently to combine all the ingredients
