Soft and Chewy Snickerdoodle Gingersnap Cookies with Eggnog Frosting
Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1/4 cup molasses
- 3 cups all-purpose flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 1/4 cup granulated sugar for rolling
- 1 teaspoon ground nutmeg for rolling
- 1 cup powdered sugar
- 3 tablespoons eggnog
- 1/2 teaspoon vanilla extract
- Pinch of ground nutmeg for frosting
Instructions:
Melt the butter and mix it with the white sugar and brown sugar in a large bowl until the mixture is light and fluffy
One at a time, add the eggs and beat well after each one
Add the molasses and mix it in
Mix the flour, baking soda, salt, cinnamon, ginger, and cloves together in a different bowl using a whisk
Slowly add the dry ingredients to the wet ones and mix them together until they are just combined
Put the dough in the fridge for at least an hour with the lid on
Warm your oven up to 375F 190C and put parchment paper on baking sheets
In a small bowl, mix together 1 teaspoon of ground nutmeg and 1/4 cup of granulated sugar
This will be used for rolling
Roll the dough into 1-inch balls and coat them in the sugar-nutmeg mix
Spread the dough balls out on the baking sheets that have been prepared, leaving about 2 inches of space between each one
For 8 to 10 minutes, or until the edges are just beginning to turn golden, but the centers are still soft, bake the cookies
They should cool for 5 minutes on the baking sheets before being moved to wire racks to cool all the way
With a whisk, mix powdered sugar, eggnog, vanilla extract, and a pinch of ground nutmeg for the eggnog frosting until it is smooth
Pour or spread the eggnog frosting over the tops of the cookies after they have cooled
The frosting can also be used to coat the cookies more thickly
Before you serve, let the frosting set for a few minutes
