Thai Basil Meatballs with Peanut-Basil Sauce
Ingredients:
- 1 lb ground pork
- 1/2 cup breadcrumbs
- 1/4 cup coconut milk
- 2 tablespoons soy sauce
- 2 tablespoons fish sauce
- 1 tablespoon red curry paste
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 cup fresh basil, chopped
- 2 tablespoons vegetable oil
- 1/4 cup chopped peanuts for garnish
- Fresh basil leaves for garnish
Instructions:
Put coconut milk, soy sauce, fish sauce, red curry paste, minced garlic, grated ginger, chopped fresh basil, and ground pork in a large bowl
Combine the ingredients and mix them well
Then, use your hands to form the mixture into meatballs
In a pan, heat the vegetable oil over medium heat
Make sure the meatballs are cooked all the way through and browned on all sides
Make the sauce with peanuts and basil see below
Put the Thai basil meatballs on a platter and drizzle with the Peanut-Basil Sauce
Top with fresh basil leaves and chopped peanuts
For the sauce with peanuts and basil: 1 tablespoon of honey, 1 tablespoon of rice vinegar, 1/4 cup of chopped fresh basil, and 1/4 cup of peanut butter should all be mixed together in a small saucepan
Stir the ingredients together over low heat until they are well mixed and just a little warm
Spread the Peanut-Basil Sauce on top of the meatballs
