Chicken Pot Pie For Two
This chicken pot pie recipe is perfect for two people because it has a homemade double pie crust that is filled with tender chicken, mixed vegetables, and a creamy sauce.
Ingredients:
- 2 boneless, skinless chicken breasts, cooked and shredded
- 1 cup frozen mixed vegetables carrots, peas, corn
- 1/2 cup diced potatoes
- 1/4 cup diced onion
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried rosemary
- 1 1/4 cups chicken broth
- 1/4 cup heavy cream
- 1 double pie crust homemade or store-bought
Instructions:
Preheat the oven to 375F 190C
In a large skillet, melt butter over medium heat
Add diced onion and cook until translucent
Stir in flour, salt, pepper, thyme, and rosemary
Cook for 1 minute, stirring constantly
Gradually add chicken broth and heavy cream, stirring constantly until the mixture thickens
Add shredded chicken, mixed vegetables, and diced potatoes
Cook until vegetables are heated through
Line a pie dish with one pie crust
Pour the chicken mixture into the crust
Cover with the second pie crust, sealing the edges
Cut slits in the top crust to vent
Bake for 30-35 minutes or until the crust is golden brown and the filling is bubbly
Let cool for a few minutes before serving
