Instant Pot Sandwiches

These Instant Pot sandwiches are a quick and delicious meal with shredded barbecue chicken, sauteed veggies, and melted provolone cheese.

Ingredients:

  • 1 lb boneless chicken breast, shredded
  • 1 cup barbecue sauce
  • 1 onion, diced
  • 1 bell pepper, sliced
  • 4 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/2 cup chicken broth
  • 4 sandwich rolls
  • 4 slices provolone cheese
  • 2 tbsp olive oil
  • Salt to taste

Instructions:

Put the Instant Pot on Saute and heat the olive oil

Put in minced garlic, diced onions, and sliced bell pepper

Fry until the meat is soft

Cumin, smoked paprika, black pepper, and salt should be added

Do this for two minutes

BBQ sauce and chicken broth should be added

Mix things together well

Put the lid back on top of the Instant Pot and set it to Manual mode

Wait 5 minutes at high pressure

Do a quick pressure release after the cooking is done

Take off the lid and stir the stuff inside

Use the Saute mode to let any extra liquid evaporate

Cut the rolls into pieces and put some of the chicken mixture on each one

Throw a piece of provolone cheese on top and broil it until the cheese melts and bubbles

Enjoy the sandwiches while they are still warm
