Keto Crock Pot Beef and Broccoli
A delicious and keto-friendly version of the classic Crock Pot Beef and Broccoli. Tender beef strips cooked in a savory sauce with broccoli, perfect for a comforting low-carb meal.
Ingredients:
- 2 lbs beef chuck roast, sliced into thin strips
- 1 cup beef broth
- 1/2 cup soy sauce or coconut aminos for keto
- 1/3 cup erythritol sweetener
- 3 cloves garlic, minced
- 2 tablespoons sesame oil
- 1/4 teaspoon red pepper flakes
- 4 cups broccoli florets
- 2 tablespoons water
- 2 tablespoons arrowroot powder or xanthan gum for keto
Instructions:
Blend beef broth, soy sauce or coconut aminos, garlic, sesame oil, and red pepper flakes together in a bowl
Pour the sauce over the beef strips that have been put in a crock pot
Put the lid on top and cook on low for 6 to 7 hours or high for 3 to 4 hours
Add the arrowroot powder or xanthan gum and water to the crockpot about 30 minutes before you want to serve
To make the sauce thicker, stir it well
Cover the broccoli florets in sauce and put them in the crock pot
Put the lid back on and cook for another 30 minutes, until the broccoli is soft
Enjoy while hot
