Low Carb Cheese and Bacon Cauliflower Casserole

This Low Carb Cheese and Bacon Cauliflower Casserole is a delicious keto-friendly dish thats packed with flavor. Its a perfect side dish for any meal or a satisfying main course on its own.

Ingredients:

  • 1 large head cauliflower, cut into florets
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh chives for garnish optional

Instructions:

Preheat oven to 375F 190C

Grease a casserole dish

Steam cauliflower florets until tender, about 5-7 minutes

Drain well and place in the prepared casserole dish

In a bowl, mix together cooked bacon, cheddar cheese, mozzarella cheese, Parmesan cheese, sour cream, heavy cream, minced garlic, salt, and pepper

Pour the cheese and bacon mixture over the cauliflower, ensuring its evenly distributed

Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly

Garnish with chopped fresh chives if desired before serving
