Bacon, Jalapeno, and Onion Jam
Ingredients:
- 1 lb bacon, chopped
- 2 large onions, thinly sliced
- 3-4 jalapeno peppers, seeded and finely chopped
- 1 cup brown sugar
- 1/2 cup apple cider vinegar
- 1/4 cup water
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
Crisp up the chopped bacon by cooking it over medium-high heat in a large skillet
After taking the bacon out of the skillet, drain the excess grease by placing it on paper towels
Add the chopped jalapeo peppers and thinly sliced onions to the same skillet that contains the bacon drippings
Simmer on medium heat, stirring periodically, until the jalapeos soften and the onions caramelize, 15 to 20 minutes
Reintroduce the cooked bacon, onions, and jalapeos to the skillet
Add the water, apple cider vinegar, brown sugar, salt, and black pepper and stir
Toss to thoroughly mix in all the ingredients
After lowering the heat to low, simmer the mixture for thirty to forty minutes, or until it thickens and takes on the consistency of jam
To avoid burning, stir from time to time
Remove the bacon, jalapeo, and onion jam from the heat and allow it to cool slightly after it has thickened
Once the jam is in a food processor, pulse it a few times to get the consistency you want
Depending on your taste, you can make it smoother or leave it chunky
Let the jam cool fully before putting it in a jar or other airtight container
Keep it chilled in the fridge
Serve the onion, jalapeo, and bacon jam as a glaze for meats or as a condiment for sandwiches, grilled cheese, and burgers
