Summer Veggie Stir-Fry
This vibrant stir-fry is packed with fresh summer vegetables and tossed in a savory-sweet sauce. Its quick to make and perfect for a light and healthy dinner on warm summer evenings.
Ingredients:
- 2 cups mixed vegetables bell peppers, zucchini, mushrooms, snap peas
- 1 tablespoon sesame oil
- 3 cloves garlic, minced
- 1 tablespoon grated ginger
- 1/4 cup soy sauce
- 2 tablespoons maple syrup
- 2 cups cooked quinoa or brown rice
- 2 green onions, chopped for garnish
- Sesame seeds for garnish
Instructions:
Warm up the sesame oil in a big pan over medium-high heat
Grate the ginger and mince the garlic
Saut for one minute
Stir-fry the vegetables for 5 to 7 minutes, until they are tender but still crisp
Put the soy sauce and maple syrup in a small bowl and mix them together
Then, pour the mixture over the vegetables
To coat, stir well
Put the stir-fry on top of brown rice or cooked quinoa
Put green onions and sesame seeds that have been chopped on top
