Ginger Pineapple Macaroon Tarts

These ginger pineapple macaroon tarts are a delightful combination of tropical flavors and chewy texture. The ginger adds a subtle warmth while the pineapple provides a sweet tanginess, all encased in a crispy macaroon crust. Perfect for a refreshing dessert or snack

Ingredients:

  • 1 cup shredded coconut
  • 1/2 cup almond flour
  • 1/4 cup ginger, finely chopped
  • 1/4 cup pineapple chunks, diced
  • 1/4 cup honey
  • 1 egg
  • 1/4 teaspoon vanilla extract

Instructions:

Preheat oven to 350F 175C

In a bowl, mix shredded coconut, almond flour, chopped ginger, diced pineapple, honey, egg, and vanilla extract until well combined

Grease mini tart pans with cooking spray

Press the coconut mixture into the bottom and up the sides of each tart pan

Bake in the preheated oven for 15-20 minutes or until lightly golden brown

Allow the tarts to cool completely before removing them from the pans

Serve and enjoy
